Spanish Recipe Paella

A rice dish that is internationally known is the Paella. It originated in the Valencian region of Spain and is part of the national dishes of the Spaniards.

When it comes to paella, you will never run out of recipes as there are literally hundreds of versions for paella alone. Every cook has their own, which makes the dish unique in almost every place where we serve it.

Most of the Spanish recipes for paella are traditionally cooked and prepared in a round flat pan that has two handles which is called paellera. But for a little twist on the Spanish recipe, here is one that is cooked using a pressure cooker (which I loooove because it is soo quick) and that can be prepared in 25 minutes.

Ingredients:
  • 2 fl. Oz olive oil
  • Diced small onion
  • Diced medium size green bell pepper
  • Skinned and diced large tomato
  • 8 oz of uncooked shrimp that is peeled and deveined
  • ¼ tsp. saffron
  • 26 fl. Oz of chicken broth
  • 12 oz ( 1 ½ cups) rice
  • 1 cup of frozen green peas (not canned)
  • ¼ tsp ground cumin
  • A dash of ground pepper
  • Lemon wedges for garnishing
  • How to Prepare:

    1. Use a pressure cooker to sauté the diced onion with a dash of pepper until tender. Use the olive oil for sautéing then add the diced tomato and cook further for approximately 5 minutes.

    2. Gradually add the rice and sauté it until it is translucent.

    3. Pour in the chicken broth, add the shrimp, the green peas, cumin, saffron and another dash of pepper to taste. Close the pressure cooker.

    4. Cook the paella in a high pressure over medium heat for about 3 minutes.

    5. When the paella is cooked, use the lemon wedges for garnishing in the platter.

    Easy isn't it? This Spanish recipe paella serves 6 persons. It may not be as elaborate as other paella recipes but it is one of the easiest to prepare. Most cooks say that paella is hard to prepare but not with this recipe.

    This is a good way to feed your hungry family when you are too busy or just too tired to cook. It is a Spanish recipe paella that can be cooked in a short amount of time but there is nothing short about the taste.
